A New Recipe to share

So yesterday, I had a hankering for some soup.  I knew I had some precooked italian sausage in the fridge and some totellini in the pantry.  So I pulled them out and added a few other ingredients and ended up with what my husband called "the BEST thing he has ever eaten."  I have to think that may be a bit of an overstatement, but even I have to admit that it was REALLY good.  SO I thought I would share the recipe with all of my friends.

Best Ever Sausage & Tortellini Soup

Ingredients:
3 cups cooked Italian sausage
3 cups uncooked tortellini
4 cups water
1 can evaporated milk
6 chicken boullion cubes
1 tbsp. oregano
1 tbsp. parsley
1 tbsp. chives
salt & pepper to taste
parmesan cheese

Put all ingredients except tortellini in medium size sauce pan and bring to boil.  Allow to simmer about 15 minutes.  Add tortellini and allow to boil according to pasta pkg. instructions.  Sprinkle with freshly grated parmesan cheese and serve.

3 Minute Scrambled Omelette

So I love to have omelettes for breakfast, it's no secret.  The other day I wanted an omelette but didn't have time to make one in my traditional style.  So I tried something new, and it was AWESOME!!!! (not to mention super quick)

Here is the recipe for anyone else that likes omelettes like I do.

3 Minute Scrambled Omelette

Ingredients:
1 egg
2 tbsp. diced tomato
1 tbsp. green onion
1 slice of deli ham torn into pieces
salt and pepper to taste

Spray a microwave safe bowl with Pam cooking spray.  Crack egg into bowl and beat with a fork.  Stir in remaining ingredients.  Place in microwave and cook on high for 1 minute.  Stir, then cook for one more minute.
Presto you have your 3 minute scrambled omelette.

You can also try other veggie favorites like green pepper or mushrooms, or replace the ham with sausage or bacon.  Yummy!!
